Poulet Rouge came to life in Quebec, Canada, from the ambition of two young friends. The journey began in 2012, when they opened their first fast-casual restaurant in a shopping center, Les Galeries Joliette. In 2017, a third friend joined the adventure, bringing new momentum to the brand’s growth.
Born in Quebec with Mediterranean roots, the founders grew up in a family already immersed in the fast-casual industry. Inspired by this heritage, they sought to bring together the best of both cultures in their menu: a Modern Fusion cuisine, generous and flavourful, made with fresh, high-quality ingredients, and above all, served with heart by a dynamic and welcoming team.
At first chosen by chance, the name Poulet Rouge, which translates to Red Chicken in English, gradually took on deeper meaning. In 2017, after five years of trials, learning, and evolution, the idea that would transform the brand took shape: customizable grilled chicken bowls, tailored to each customer’s tastes and needs. A promise made to all those seeking a healthy and balanced lifestyle.
